Classic heirloom cardoon with delicate flavor and virtually no thorns. The plant has green leaves that turn white. Cardoon is a close relative of artichoke – both are members of the thistle family – but unlike artichoke, the parts of cardoon that are eaten are the leaves and flower stalks, not the flower bud. The stalks are blanched and eaten fresh like celery; also tasty batter-dipped and fried. Cardoon is a large plant up to 4 feet tall and 2 feet wide. Can grow anywhere in the United States. Tolerates partial shade but does best in full sun.
