Asparagus officinalis

A culinary prize that will keep on giving year after year. Once established, 1-2 seasons depending on rain fall and quality of soil, the bounty begins. Shoots emerge in early spring and can be cut when still tender, usually about 6-12” high. making sure to leave at least 1/3 to grow tall and store energy for the next cycle of dormancy and emergence. This plant will inhabit your garden, in full sun or part shade and add a soft, tall fern like aesthetic even through the hellish periods of 100+ degree weather and will benefit from some supplemental watering but not require as much as most annuals. Cut shoots are delicious fresh and uncooked, pan seared or baked.
