Purslane
Portulaca oleracea

Often found growing in some of the least desirable locations, purslane is both ambitious and delicious. It is juicy with a hint of citrus and makes great salad garnish while adding texture. This plant can be grown with minimum soil and water but if you put it in your garden and give it care, they will thrive, re-seed and spread to nearby locations. This plant is easy to pull so don’t worry about it taking over -- just enjoy its wandering ways until it’s time to harvest for a salad.
